Triple Berry Pie | Eating to Live

This is one of my husbands favorite pies.  He’s so grateful I was able to develop his favorite pie with no added sugar and gluten-free.  The rest of my family loves it too and doesn’t even realize that it’s gluten-free and the sugar has been replaced with Swerve.  I love when that happens.

Ingredients

1 recipe of gluten-free pie crust

7 Cups fresh or frozen berries (Blackberries, Blueberries, Raspberries)

1/2 cup granulated Swerve

1/2 cup tapioca flour

2 TBSP fresh lemon juice

Directions

Pour all the berries in a large bowl.  Sprinkle lemon juice over the berries and gently stir.  Combine Swerve and tapioca flour together and sprinkle over the berries and gently stir berries until covered with flour mixture.  Set aside.

Make pie crust

Follow directions on pie crust recipe to finish the pie.
