After I’ve grilled some chicken breasts I love to use the leftover chicken for this recipe. It’s a simple green salad with lots of healthy greens that I just add some chicken to make a wonderful meal.
4 cups mixed greens
1 Grilled Chicken Breast, sliced
1 Avocado, sliced
12 grape tomatoes, sliced in half
1 Carrot, grated
Any other veggies or greens you have on hand. I love to add micro-greens to this salad to make it even healthier.
Put mixed greens on two plates. Add grated carrots, sliced avocado and tomatoes to each salad. Add any additional veggies or micro-greens to the salad. Add the sliced chicken breast. Top with your favorite dressing. I like the raspberry vinaigrette on this one.
