Superfood Salad | Eating to Live

The idea with this salad is to add what ever superfoods you have around on it.   We like to make this for a full meal sometimes so if we have some roasted broccoli and cauliflower, asparagus or brussels sprouts we add it.  I’ll put the basics and the dressing below and then you can get creative.


4 cups spring mix greens

4 celery stalks chopped

1 beet shredded

2 carrots shredded

1/2 cup radishes sliced

2 green onions

1 can artichoke hearts (you can use frozen that you’ve thawed)

1 avocado, sliced

Any other veggies you’d like to add


Divide mixed greens into 2 large salad bowls. Tope with celery, beets, carrots, radishes, artichokes and any other veggies you’d like.  Slice a half an avocado onto each salad.

Drizzle with your favorite dressing.  We like the herb vinaigrette on this one.
