INGREDIENTS 

 

1 head of kale  

4 cups thinly sliced lettuce 

1 cup shredded carrots 

1 cup shredded beets 

½ bunch cilantro leaves 

chopped 2 scallions, thinly sliced 

 

PREPARATION Cut kale into ribbon strips and massage with ¼ teaspoon salt and juice of half a lemon until soft. Add to other ingredients and mix well. Top with Spicy Thai Dressing (link to dressing recipe) or Primal Kitchens Sesame Ginger Dressing. Serves 4
