You’ve probably guessed by now that Salmon is one of my favorite fish to eat and also recommend to my clients.  A good wild caught salmon has lots of great vitamins and minerals we all need plus good fish oils that are so good for the body and the brain.  This recipe I simply take leftover baked salmon and put it on some salad greens with some of my favorite veggies and a dressing and you have a great main course salad.


4 cups mixed greens

1 baked salmon fillet

1/2 avocado, sliced

1/4 cup raspberries

1/4 cup blueberries

Microgreens for garnish

Favorite salad dressing


Put mixed greens on a plate.  Add berries and avocado.  Lay salmon fillet on top and garnish with micro-greens.  Serve with favorite dressing. I really like raspberry vinaigrette  with this one.
