This is such a simple recipe but so tasty as a quick side dish. What makes these taste so good is roasting them until they are a little dark brown. It really brings out the flavor of the sweet potato.
2 medium sweet potatoes, peeled and cut into 1 inch squares
1/4 cup Avocado oil
Salt & pepper to taste
Preheat oven to 425°. Line baking sheet with foil. Add sweet potatoes to a bowl and drizzle avocado oil over the top. Add salt and pepper and toss until well coated. Put on baking sheet and bake in the oven for 15 min. Turn sweet potatoes and bake another 15-20 minutes until edges of sweet potatoes are dark brown and serve.
