Turnips are a vegetable most of my clients need to acquire a taste for.  They aren’t used to them so this recipe incorporates them into their diet and is easier for them to eat.  Especially if you’ve made it to level 2 or 3 and can top it with Chicken Alfredo or Beef Stroganoff.

Ingredients

6 turnips, peeled and cut in quarters

1/2 cup almond or coconut milk

2 TBSP ghee (if you’re in level 4 you can add butter if you prefer)

Salt and peper to taste

Directions

Add turnips to cold water.  Turn up the stove top to high and boil turnips until they are tender (30-35 min).  Pour off water.  Transfer to a bowl and add the almond milk, ghee and salt and pepper.  Use a potato masher if you like it chunky.  If you want it more smooth then use a mixer or an emulsifier.  Serve alone or top with Thai Coconut Shrimp.
