Kale Coleslaw Recipe

This is great way to incorporate kale into your meals.  We love the unique flavor that this dressing adds to kale.  This recipe is from Andrea Nakayama.

Dressing Ingredients

4 TBSP olive oil

3 TBSP fresh squeezed orange juice

2 tsp lemon juice

2 TBSP light miso

1 clove garlic crushed

1-2 tsp yacon or coconut nectar

1 1/4 tsp onion powder

1/4 tsp Dijon mustard or pinch of mustard powder

1/8 tsp iodized sea salt

Pinch cayenne pepper (optional)

Salad Ingredients

1 bunch kale, de-stemmed

1/4 head cabbage shredded

2 tomatoes, seeded and chopped

1/4 cup red onion, thinly julienned (optional)


In a medium bowl, combine oil, juices, miso, garlic, yacon or coconut nectar, onion powder, mustard, salt, and cayenne pepper.  Whisk to a smooth consistency and set aside.

Chiffonade the kale into thin strips and massage with a small amount of salt to soften the kale.  In a large bowl, toss the kale with the dressing and massage for three minutes.  Add cabbage, tomatoes and red onion.  Serve.
