This is another easy recipe for you if you’re on the go.  I add chicken, some veggies and wrap it up.  Then put it in a container or a ziplock, store it in a small cooler and take it with me to have later in the day.  We like these when we’re going on a road trip.  That way we can stop and eat and not get off plan.


2 large lettuce leaves per person (Butter leaf or romaine work really well, just not iceberg)

Half of a large grilled chicken breast sliced

1 Avocado

1 TBSP Avocado mayonaise

Tomatoes, carrots or mushrooms (optional)


Spread mayonaise on lettuce leaves.  Add chicken, avocado and any additional veggies.  Wrap it up and enjoy.
