This is hard to call a caesar salad because in level one you don’t add parmesan cheese (and there’s not croutons) but because of the dressing that was inspired by Andrea Nakayama it tastes just like a caesar salad to me.
1/2 head of organic Romaine lettuce, cleaned and chopped in bite size pieces
1/2 cup olive oil
2 stalks organic celery, chopped
2 TBSP lemon juice
1 TBSP Apple Cider Vinegar
3 TBSP Coconut Aminos
2 TBSP Tahini (you can substitute chickpea miso)
2 dates pitted (optional)
1 tsp kelp powder (optional)
2 cloves garlic
Place lettuce in a bowl. Add all the remainder ingredients to a blender and blend until smooth. Pour a small amount on the lettuce and toss. Add more if needed. Add pepper to taste.
