If you’ve been on our site much you know we love our fish.  There’s very few fish that we don’t like or we don’t eat.  Making sure they are wild caught is essential to your health.  Mahi Mahi was a fish we were first introduced to in Hawaii.  I’m so glad I’ve been able to get it here on the mainland.  We love it with the mango salsa but you can serve it plain or with your favorite salsa.

Ingredients

2-4 oz fillets wild caught Mahi Mahi

1/4 cup olive oil

1 lemon, zest and then juice

1 TBSP minced garlic

Salt & pepper to taste

Mango Salsa (see below)

Directions

Make the mango salsa (see below) earlier in the day so the flavors have time to blend.  Mix the olive oil, garlic, lemon zest and juice in a bowl.  Place the Mahi Mahi in a dish, salt and pepper and cover with oil mixture.  Let marinade for 30-60 minutes turning on occasion.

Preheat oven to 425°.  Put Mahi Mahi on a baking dish.  Place in oven for 10-15 minutes.  Fish is done when you lift the fish from the side and the middle is translucent and flakes.  Don’t overcook.  Serve with mango salsa on top.

Mango Salsa

1/2 mango, sliced in small pieces

1/4 small red onion, diced in tiny pieces

1/4 cup diced pineapple

1/4 cup cilantro, diced

Mix together all ingredients and store in fridge until time to serve.
