This is by far one of our favorite salad dressings.  I love the combo of avocado and pomegranates with a hint of orange juice in the dressing.  All of these ingredients are great for helping you to achieve your optimal health.  This recipe comes from Andrea Nakayama.

INGREDIENTS

Dressing

¼ cup extra virgin olive oil

1 Orange (grate the peel and juice)

2 TBSP apple cider vinegar

½ tsp sea salt

 

4 cups organic spring mix greens

1 Avocado diced

1 cup pomegranate seeds

1 cup pecans, toasted*

 

To make dressing place all ingredients into a small mason jar and shake well.

Toss all salad ingredients together in a salad bowl. Pour dressing over and toss again. Serve immediately.

To toast pecans place them on a baking sheet with foil. Bake them at 350° for 10 minutes. Watch them closely as not to burn them. You just want them become crunchy.
